- 1 3/4 cups All-purpose flour
- 1 cup Pumpkin puree
- 3/4 cup Granulated sugar
- 1/2 cup Vegetable oil
- 2 large Eggs
- 1 teaspoon Baking powder
- 1/2 teaspoon Baking soda
- 1 teaspoon Ground cinnamon
- 1/2 teaspoon Ground nutmeg
- 1/4 teaspoon Ground ginger
- 1/4 teaspoon Salt
- 1 teaspoon Vanilla extract
- 1/4 cup Milk
- 1/2 cup Chopped pecans (optional)

Preheat the oven to 350Β°F (175Β°C). Line a 12-cup muffin tin with paper liners or grease with cooking spray.

In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

In a separate bowl, beat the eggs. Add in the sugar, pumpkin puree, vegetable oil, milk, and vanilla extract. Stir until well combined.
