Ingredients
- 1 1/2 cups All-purpose flour
- 1 1/2 teaspoons Baking powder
- 1/4 teaspoon Salt
- 1/2 cup Sugar
- 1 large Egg
- 1/2 cup Milk
- 1/4 cup Vegetable oil
- 1 teaspoon Vanilla extract
- 4 oz (softened) Cream cheese
- 1 cup Powdered sugar
- 1/2 cup Coconut flakes
- 6 medium (tops cut off to mimic Santa hats) Strawberries

Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, baking powder, salt, and sugar.

In another bowl, beat the egg, then mix in the milk, vegetable oil, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix to keep the muffins fluffy.

Scoop the batter evenly into the prepared muffin tin, filling each about two-thirds full.
