Ingredients
- 1 1/2 cups All-purpose flour
- 3/4 cup Sugar
- 1 1/2 teaspoons Baking powder
- 1/4 teaspoon Salt
- 1/2 cup Milk
- 1/4 cup Unsalted butter (melted)
- 1 large Egg
- 1 teaspoon Vanilla extract
- A few drops Yellow food coloring
- 4 ounces Cream cheese
- 1 cup Powdered sugar
- 1/4 cup Mini chocolate chips
- As needed Black decorating gel
- As needed Red decorating gel

Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, whisk together the milk, melted butter, egg, and vanilla extract.

Slowly add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

Add a few drops of yellow food coloring to the batter and stir until the color is well-mixed and resembles Pikachu’s iconic yellow hue.

Spoon the batter into the lined muffin tins, filling each about 2/3 full.

Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean. Let them cool completely before decorating.

While the muffins cool, prepare the cream cheese frosting. In a medium bowl, beat the cream cheese and powdered sugar together until smooth.
