Ingredients

  • 1/2 cup (softened) Unsalted butter
  • 1/2 cup Brown sugar
  • 1/4 cup Granulated sugar
  • 1 large Egg
  • 1 tsp Vanilla extract
  • 1 1/4 cup All-purpose flour
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 3/4 cup Butterscotch chips
  • 2 tbsp (reduced to a syrup) Cream soda (optional)

Instructions

    Preheat your oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.

    Add the egg and vanilla extract to the mixture, and continue to beat until well combined.

    In a separate bowl, whisk together the flour, baking soda, and salt.

    Gradually add the dry ingredients into the wet ingredients, mixing just until combined.

    Fold in the butterscotch chips. If using cream soda for a more authentic Butterbeer flavor, add the reduced syrup in this step and mix gently.
