Ingredients
- 2 1/2 cups All-purpose flour
- 1 cup Unsalted butter (softened)
- 1 1/2 cups Granulated sugar
- 3 Eggs
- 2 teaspoons Vanilla extract
- 2 teaspoons Baking powder
- 1/4 teaspoon Salt
- 1 cup Whole milk
- 4 cups Powdered sugar
- as needed Food coloring (red, yellow, blue, black)
Instructions
-
1
Preheat your oven to 350Β°F (175Β°C) and grease two 9-inch cake pans. Line the bottom with parchment paper for easier release.
-
2
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
-
3
In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
-
4
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
-
5
Gradually add the dry ingredients to the batter, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
-
6
Pour the batter evenly between the two prepared cake pans and smooth the tops with a spatula.
-
7
Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
-
8
Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
-
9
While the cakes are cooling, make the buttercream frosting. In a large bowl, beat the softened butter until creamy. Slowly add in the powdered sugar, one cup at a time, mixing until smooth.
-
10
Continue beating the buttercream while slowly adding in the vanilla extract. Beat until light and fluffy.
-
11
Divide the buttercream into four different bowls. Add food coloring to each bowl to create red, yellow, blue, and black buttercream.
-
12
Once the cakes are completely cool, spread a thin layer of buttercream between the two cake layers to sandwich them together.
-
13
Use the remaining buttercream to frost the outside of the cake. Use the colored buttercream to create Pokemon-inspired designs, such as Pikachu or a Pokeball on the cake using piping bags or a spatula.
-
14
Chill the cake for 20 minutes to set the buttercream and enjoy your Pokemon Buttercream Cake!
