Complexity: Easy Cooking Time: 25 minutes

Ingredients

  • 1 cup All-purpose flour
  • 1/2 cup Almond flour
  • 1/2 cup Unsalted butter (softened)
  • 1/3 cup Granulated sugar
  • 1 tablespoon Matcha green tea powder
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/4 cup Chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium-sized bowl, whisk together the all-purpose flour, almond flour, matcha, baking powder, and salt.
  3. In a separate large bowl, beat the softened butter and sugar together until light and fluffy. Add the vanilla extract and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  5. Gently fold in the chopped walnuts to the dough for added texture and crunch.
  6. Scoop tablespoon-sized portions of the dough and roll them into balls. Place them on the prepared baking sheet, about 2 inches apart.
  7. Lightly press each ball down with the back of a spoon to flatten them slightly, ensuring they bake evenly.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges turn golden brown.
  9. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. Enjoy your crunchy matcha walnut cookies with a cup of tea or coffee!
