Ingredients
- 2 1/4 cups All-purpose flour
- 1 teaspoon Baking powder
- 1/2 teaspoon Salt
- 1/2 cup Unsalted butter (softened)
- 3/4 cup Granulated sugar
- 1 large Egg
- 1 teaspoon Vanilla extract
- 2 tablespoons Heavy cream
- 1 1/2 cups Powdered sugar (for frosting)
- 1/4 cup Butter (for frosting, softened)
- 1 teaspoon Vanilla extract (for frosting)
- 3 tablespoons Holiday sprinkles
Instructions
-
1
Preheat the oven to 350Β°F (175Β°C). Line a baking sheet with parchment paper.
-
2
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
-
3
In a large mixing bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
-
4
Add the egg and vanilla extract to the butter-sugar mixture and mix until combined.
-
5
Gradually add the dry ingredients to the wet ingredients, mixing just until a dough forms.
-
6
Roll the dough into small balls (about 1 tablespoon each) and place them on the prepared baking sheet. Press the tops down lightly to flatten them a bit.
-
7
Bake for 8-10 minutes, or until the edges are just golden. Let cookies cool completely on a wire rack.
-
8
While the cookies cool, make the frosting by beating the powdered sugar, butter, heavy cream, and vanilla extract together until smooth and creamy.
-
9
Once the cookies are cool, spread a layer of frosting on the bottom of one cookie and press another cookie on top to create a sandwich.
-
10
Roll the edges of each cookie sandwich in holiday sprinkles to decorate.
-
11
Serve and enjoy your festive Christmas sugar cookie sandwiches!
