Ingredients

  • 2 teaspoons Matcha green tea powder
  • 1 cup Heavy whipping cream
  • 2 tablespoons Sugar
  • 2 large Egg whites
  • 1/2 teaspoon Vanilla extract
  • 1 tablespoon Water

Instructions

  1. In a small bowl, whisk together the matcha powder and 1 tablespoon of water until smooth and lump-free. Set aside.
  2. In a medium bowl, whip the heavy whipping cream until medium-soft peaks form (about 2-3 minutes). Set aside in the refrigerator.
  3. In a separate bowl, whisk the egg whites until soft peaks form. Gradually add sugar while whisking until it becomes glossy and firm.
  4. Gently fold the matcha mixture into the whipped cream until combined.
  5. Next, fold the egg whites into the matcha-cream mixture in two batches, being careful not to deflate the airy texture.
  6. Add the vanilla extract and continue folding gently until everything is well combined.
  7. Spoon the mousse into serving glasses or bowls, and chill in the refrigerator for at least 1 hour before serving.
  8. Serve as-is or garnish with a sprinkle of matcha powder on top for an extra touch!
