Ingredients
- 2 1/2 cups All-purpose flour
- 1 1/2 cups Granulated sugar
- 1 cup (softened) Unsalted butter
- 2 1/2 tsp Baking powder
- 1/2 tsp Salt
- 4 large Eggs
- 1 cup Whole milk
- 2 tsp Vanilla extract
- 4 cups Confectioners' sugar
- 3 tbsp Heavy cream
- Varies as needed for decorating Food coloring (red, blue, yellow)
- 1 small tube Black decorating gel
- As needed for decoration Pokémon-themed cake toppers or edible images
Instructions
-
1
Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans. Line the bottom of the pans with parchment paper for easy removal.
-
2
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
-
3
In a large mixing bowl, cream the softened butter and sugar together using an electric mixer on medium speed until light and fluffy, about 3 minutes.
-
4
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
-
5
Gradually add the dry ingredients to the wet ingredients in batches, alternating with the milk. Begin and end with the flour mixture. Beat until just combined.
-
6
Divide the batter evenly between the two prepared cake pans and smooth the tops with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
-
7
Let the cake layers cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
-
8
While the cakes cool, make the buttercream frosting. In a large bowl, beat the softened butter on medium speed until creamy. Gradually add the confectioners' sugar, heavy cream, and vanilla extract. Beat for 3-4 minutes until light and fluffy.
-
9
Once the cakes are fully cooled, level the tops with a serrated knife if necessary.
-
10
Spread a layer of buttercream frosting between the two cake layers, then frost the top and sides of the entire cake with the remaining buttercream.
-
11
Divide the remaining buttercream into small bowls and add food coloring to create different colors (red, blue, yellow). Use a piping bag or spatula to decorate the cake with Pokémon-themed designs or color blocks.
-
12
Use black decorating gel to outline or add details to the design. Optionally, place Pokémon-themed cake toppers or edible images on top for added flair.
-
13
Let the cake set for 10-15 minutes, then serve and enjoy your Pokémon cake!
