Complexity: Easy Cooking Time: 30 minutes

Ingredients

  • 1 1/2 cups Whole wheat flour
  • 1/2 cup Almond flour
  • 1/3 cup Coconut oil (melted)
  • 2 tablespoons Maple syrup
  • 1/4 cup Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Ground cinnamon
  • 1 pinch Pinch of salt
  • 2 tablespoons Vegan chocolate chips (optional for decorating)

Instructions

  1. 1

Preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.

  2. 2

In a large bowl, whisk together the whole wheat flour, almond flour, baking powder, cinnamon, and salt.

  3. 3

In a separate bowl, mix the melted coconut oil, maple syrup, applesauce, and vanilla extract.

  4. 4

Combine the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too sticky, add a small amount of additional whole wheat flour.

  5. 5

Lightly flour a clean surface and roll out the dough to about 1/4 inch thickness.

  6. 6

Cut out cat shapes using a cookie cutter or shape by hand and place them on the prepared baking sheet.

  7. 7

Optionally, decorate the faces of the cat cookies using vegan chocolate chips or other sugar-free toppings.

  8. 8

Bake for 12-15 minutes or until the edges are lightly golden.

  9. 9

Remove from oven and let the cookies cool on a wire rack before serving.
