Ingredients

  • 2 cups (peeled and diced) Pumpkin
  • 1.5 cups Sugar
  • 1/2 cup Water
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground cloves
  • 1 tablespoon Lemon juice
  • For coating Powdered sugar

Instructions

  1. Peel and dice the pumpkin into small cubes.
  2. In a large saucepan, combine the diced pumpkin, sugar, and water.
  3. Place the saucepan on medium heat and stir until the sugar dissolves completely.
  4. Add the ground cinnamon, ground cloves, and lemon juice to the mixture.
  5. Let the mixture cook for about 40 minutes, stirring occasionally, until the pumpkin softens and the liquid thickens into a syrup.
  6. Once the pumpkin is tender and the syrup has thickened, remove from heat and let it cool slightly.
  7. Using a spoon, portion small amounts of the pumpkin mixture onto a parchment-lined tray.
  8. Let the pumpkin candies cool completely at room temperature until they firm up.
  9. Roll each piece of candy in powdered sugar to coat evenly.
  10. Store the pumpkin candies in an airtight container and enjoy!
